Capsicum Stuffed with Brown Rice and Black Beans
Capsicum Stuffed with Brown Rice and Black Beans – Flax seed cutlets

Ingredients

1 C cooked brown rice
1 C cooked black beans
2 stalks of celery diced
2 truss tomatoes diced
3 spring onion
4 capsicums
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric
1 tsp chili powder
4 C boiling water
2 Tbsp water
Pinch of salt

Instructions

Pre-heat the oven at 180C / 365F

Pre-work capsicums

Slice the top of the capsicums and remove the insides
Place them in a pot of boiling water with a pinch of salt
Boil for 10 minutes or until they become tender
Remove from the boiling water and them leave them to drain and cool

Pre-work Filling

On a medium heat add the coriander, cumin, turmeric and chili powder with 2 tablespoons of water with the spring onions and saute for a couple of minutes
Add the rest of the ingredients and combine
Fry the filling until the celery softens then switch off the heat and leave to cool

Pre-work Assembling

Place the four capsicums on a lined baking oven tray
With a soup spoon fill the inside of the capsicums with the filling then place the capsicum top with was cut off back on top

Bake

Place the oven tray in the oven and bake for 30 minutes at 180C / 365F
