Recipe – Wild & Brown Rice Salad

This is a great simple rice salad dish which makes a change from regular salads. At this time of the year in Australia as it is warming up, its a good time to add different salads to your list then rotate them until you hit the cooler months again.
Rice Salad
Ingredients
4 C Cooked Wild and brown rice
1 Yellow Capsicum diced
3 julienne cut carrots
1/2 C Raisins
2 bunches of asparagus
1 punnet of kumatoes
1 stick of celery
1/4 C Almond Slivers
1/4 C Macadamia Nuts
1 pinch of turmeric
1 handful of coriander (cilantro)
1/2 C lemon juice
1 pinch of sea salt
Instructions
Place the cooked rice, turmeric, sea salt into a bowl and combine together
With your hands fold the capsicums, carrots, raisins, almonds, asparagus, kumatoes, celery, macadamia nuts into the rice mix
Pour the lemon juice on top and combine then serve
