Recipe – Mexican Sonora Salad

I ate this many times when I was working in Sonora Desert, Mexico. I really enjoyed the
simplicity, freshness and texture of this salad. As it is getting warm here in Australia
I am looking forward to making more salads. For those in North America, Europe who will
be going into an ice age winter I guess these salads will not be the kind of food you will
be craving.
Mexican Salad
1 butter lettuce – sliced
1 red capsicum – slice lengthways
1 red onion – sliced
1 punnet of sweet cherry tomatoes – cut in half
1 orange – peeled and segmented
1 avocado
2 handfuls of corn chips

Salad Dressing Instructions
2 Tbsp white wine vinegar
1 Tbsp dijon mustard
1/2 tsp sea salt
1/2 tsp fructose
1/2 C olive oil

Salad Dressing
Place all of the ingredients in a blender then blend for a short time until a salad dressing
consistency is achieved.

Mexican Sonora Salad Instructions
Place in a salad bowl the lettuce, capsicum, red onion, tomatoes, orange and
corn chips then combine all of the dressing in the salad gently with your hands
Pour the salad dressing over the salad and again gently combine all of the ingredients together
Lastly add the avocado on top and serve
