Recipe – Vegan Strawberry Tart

This is quite delicious and straight forward to make. The combination of the fruity strawberry
flavour, toasted almonds, cinnamon and light hint of vanilla is perfect. The texture of the medium firm base with
the flavoursome soft strawberries and firm almonds is a treat too. This tart works well with firm sour plums too.
Vegan Strawberry Tart 2
115g vegan margarine
2 equivalent egg replacement (2 tsp egg replacement + 4 Tsp water)
½ tsp. salt
1 tsp. vanilla essence
¾ C. Fructose
1 1/2 C. flour
1 tsp. baking powder
¼ C Nut Milk
1 Kg Strawberries sliced in half
1 C Sliced Almonds
Pinch of Cinnamon

Round cake tin preferable with a bottom which can be removed lined with baking paper
(roughly 8 inches/20cm in diameter)

Pre-heat the oven to 190C (375 F, Gas mark 5)
Blend together the vegan margarine, egg replacement, flour, salt, baking powder, vanilla extract
and nut milk.
Form the dough with the mixture and then spread the dough at the base of the round cake tin
Place the half cut strawberries over the top of the dough in a circle
Sprinkle some almond slices over the top and then dust the top with a light sprinkle of cinnamon
Bake in the oven at 190C (375 F, Gas mark 5) for 30 minutes
