Recipe – Pineapple Rum Beans

Pineapple Rum Beans was inspired from The Great Vegan Bean Book by Kathy Hester.
Black Beans 2
1 Tbsp vegetable broth
1/ 2 small red onion
1 minced garlic clove,
1/2 C pineapple diced,
1 C cooked black beans rinsed and drained
1 Tbsp rum
1 tsp smoked paprika
1 tsp marjoram
1/2 tsp ground cumin
1/ 4 tsp salt
1/4 Black pepper
Pinch of cayenne pepper

Saute onion for approx 5 minutes
Add garlic, saute for 1 minute
Add pineapple, beans, rum, paprika, marjoram, and cumin.
Cook until it starts to simmer then decrease the heat to low and cover
Simmer for 25 minutes.
Season with salt, pepper, and cayenne.
