This is a light refreshing pasta dish it has a tiny punch of chilli, with a refreshing lemon lift, peppery rocket flavour and the subtle taste of lightly fried mushrooms and artichokes.
100 g rocket chopped
1 Tbsp chopped lemon zest
1 garlic clove, chopped
2 small red chilli, seeded and finely chopped
1 Tbsp olive oil
2 Tbsp nutritional yeast or a vegan parmesan cheese
Cook the Linguine and whilst it is cooking fry lightly the mushrooms and artichoke together on a medium
heat then place the rocket, lemon zest, garlic, chilli, olive oil and 2 tablespoons of nutritional yeast
in a large bowl and mix together ensuring the mixture is evenly distributed.
Drain the Linguine, then add to the mixture mushrooms and artichokes together.
