Recipe – Avocado, Tomato & Coriander on Toasted Ciabatta

Vegan is easy to make. Most people eat vegan food and they are unaware that it is vegan.
I get asked what do vegans eat all the time !!!
This is an easy brunch meal to make it’s quick and delicious.
Brunch
Ingredients
1 Tbsp olive oil
1 garlic clove minced
250g sweet tomatoes chopped
1 avocado mashed
A handful of coriander
1 lemon
Pepper and Salt (for seasoning if required)
2 pieces of ciabatta slices cut in the middle

Instructions
Toast the ciabatta slices
In a bowl mix together the tomatoes, garlic and then add the coriander
Spread the mashed avocado on the toast and drizzle lemon juice over the top
Now add the tomato, garlic and coriander mixture
Add over the top some pepper and salt if you like (I prefer no salt just pepper)
Serve straightaway and enjoy
Note: Toast the ciabatta so it has a light crunch to it.
