I had some left over rice from yesterday’s Indian takeaway as well as spinach and onion pakora
and potato bhonda. I also made some satay tofu too.
I decided to make this southern indian recipe which is one of my favourites.
2 cups cooked Basmati rice (or leftover rice)
2 Tbsp vegetable cooking oil
1 tsp coriander seeds
1 tsp mustard seeds
6 curry leaves
2 red chillies slit lengthways
1 tsp grated ginger
1/2 cup peanuts (roasted and unsalted)
Juice of 2 lemons
Roast and then grinder the coriander seeds. Keep to the side to add later.
Heat the oil in a frying pan and add the mustard seeds, curry leaves and green chillies.
Fry till the spluttering stops and add the ginger and peanuts.
Fry for another minute.
Add the lemon juice and mix well.
Add the rice, roasted coriander powder mix.
