Recipe – Biryani with spicy tofu and vegetables

Biryani with spicy & tofu veggies

I added simple stir fry vegetables for my side. Yes as always it’s V – E – G – A – N

Ingredients
1 cup cooked Basmati rice
1 Tbsp fresh ginger
8 cardamoms
5 cloves
2 cm cinnamon stick
1/2 C cashews
1 tsp turmeric
3 thai hot chillies
10 sultanas
1/2 onion, finely diced
1/2 C fresh coriander
1 Tbsp olive oil

Instructions
Grind ginger, cardamom, cloves & cinnamon and place in a frying pan until they become fragrant then place to the side
Fry cashews until slightly brown, remove and set aside with the ginger, cardamom, cloves & cinnamon
Fry sultanas and chillies until become frayant then place to the side
Fry onion until fragrant, then add all of the spices and sultanas and stir for 1 minute
Add cooked rice with some turmeric to the pot and mix so all ingredients are evenly combined.
Garnish with fresh coriander
