Vegan Dinner: Roast Vegetables with Gravy and Mint Sauce

Occasionally we make a roast roast vegetables for dinner.
We typically use the following vegetables: potatoes, corn on the cob, pumpkin, carrots, parsnips,
peas, kumara (New Zealand sweet potato) and yams (Although these are difficult to get)
The gravy is a vegan brand we buy and we add a teaspoon of vegemite or marmite to give the
gravy some bite. Also we pour some mint sauce over our peas…
