Recipe – Vegan Cucumber Salad with Peanuts and Chilli

This is a very tasty salad. A fresh and light lunchtime salad. All of the people I make this
ask me for the recipe (I am not exaggerating either)

Ingredients

3 cucumbers
2 tbs white vinegar
2 tsp white sugar
3 Tbsp sweet chilli sauce
10 French shallots chopped (or 2 red onions)
2 handfuls coriander
160g/1 cup roasted unsalted peanuts
2 tbs fried garlic

Serves 4

Instructions

Peel the cucumbers, cut them in half lengthways, then scoop out the seeds and slice

Combine the vinegar and sugar in a small bowl and stir until the sugar has dissolved
Transfer to a large bowl and add cucumber, sweet chilli sauce, shallots and coriander.
Mix gently, then cover and marinate in the refrigerator for 45 minutes, just before
serving, sprinkle the salad with the peanuts and crisp garlic
