Now this is yummy !
Preparation & cooking time 30-40 minutes
500g/1 Ib Rhubarb
500g/1 Ib Apple
1/2 cup sugar
2Tbsp vegan margarine
1 tsp ginger powder
1 tsp baking powder
1 1/2 cups plain flour
3/4 cup raw sugar
1/2 cup vegan margarine
vegan vanilla ice cream to serve
Combine rhubarb, apple and 1/2 cup of sugar
Simmer covered over a moderate heat until the fruit is tender
Preheat the oven 190C/375F
Brush 8 ramekin dishes (1 cup capacity) with vegan margarine
Spread the filling in the ramekins equally leaving 2cm / 3/4 inch from the top
Place the ginger, baking powder, flour and raw sugar into a mixing bowl
Then rub the margarine into the mixture until it looks like bread crumbs
Spread evening over the filling in the ramekins
Bake in the oven for 15 – 20 minutes or until the juices start to bubble
Serve each crumble hot with a spoonful of vegan vanilla ice cream
Facts on Rhubarb. The leaves are very toxic. I guess that is well known.
