Recipe – Vegan Avocado & Cherry Tomato Spread


This is a tasty quick lunch time spread. It’s fresh and light too.


250g Cherry tomatoes
1/2 red onion
1 Tbsp olive oil
1 tsp balsamic vinegar
2 crushed garlic cloves
Season with pepper and salt (I never use salt, but you can if you want to)
1 avocado


Slice – cherry tomatoes into quarters and red onion into small slices
Combine in a bowl – cherry tomatoes, red onion, tablespoon of olive oil,
teaspoon of balsamic vinegar, crushed garlic cloves

Toast some bread of your choice

Finish off – spread the avocado with a fork and mash it onto the toast. Now with a spoon
place the mixture also onto the toast.
