This is a salad I first ate a few years ago in Switzerland when I was vegetarian. The orignal recipe has parmesan cheese.
I substitued the parmesan cheese for the No Muh Piquant Cheese that I posted a few days ago – link: The Green Edge The No Muh Piquant cheese has a strong flavour which is perfect for this simple, but tasty salad.
Incidentally No Muh Cheese is not made with soy and palm oil.
3 Tb olive oil
2 Tb Balsamic vinegar
1 clove crushed garlic
1 tsp raw sugar
50g No Muh Piquant vegan cheese Website: http://www.vegusto.com/
To make the dressing – Combine the olive oil, balsamic vinegar, garlic and raw sugar until the sugar has disolved
Pour the mixture over the rocket and add the vegan cheese
I also made some samosa filled pasties again and we ate the rocket salad accompanied with a glass of Yellow Tail Merlot red wine.
